Molasses Candy

- Put a pint of common molasses over a slow fire; let it boil; stir it to prevent its running over the top of the bottle. When it has boiled for some time, try it, by taking some in a saucer: when cold, if it is brittle and hard, it is done. Flavor with essence of lemon, and stir shelled pea-nuts (groundnuts), or almonds, into it, and pour it into a buttered basin, or square tin pans, to cool.

Or, it may be made a light color by pulling it in your hands, after first having rubbed them over with sweet butter, to prevent the candy from sticking to them during the process.
