2.-Boil a quart of cream, make it sweet with white sugar, flavor with lemon, vanilla or extract of orange-flower water; when cold, freeze it as directed to make "Ice Cream." The yolks of three eggs may be beaten, and stirred into it when it is boiling hot. Cream for freezing may be made boiling hot, then made sweet with loaf sugar, and flavored with vanilla or lemon extract, or with the juice of strawberries, raspberries, or pineapple; the fruit should be bruised and strained, with a quarter of a pound of sugar to each pint of juice, and stirred into the cream when it is cold.
